!/2 cup rendered bacon fat (olive oil ,if you must)
2 cups chopped onions
1 tablespoon minced garlic
1/4 teaspoon cayenne pepper
1/2 teaspoon black pepper
2 teaspoons salt
2 pounds of frozen chopped greens ( I like to mix turnip ,collard,mustard ,and/or kale)
1 tablespoon white vinegar
Set a large saucepan or Dutch oven over medium heat
Add the bacon fat(or olive oil) ,chopped onions,garlic,cayenne and black pepper
Saute until the onions are soft
Add the salt and mixed greens
Cover the pot and cook 20 minutes ,stirring occasionly
If necessary ,lower the heat and add a little water to prevent scorching
Adjust the seasonings,add the vinegar, and cook an additional 2 minutes
