I have been involved in making chokecherry syrup and jam since I was a kid.

this is the best flavored and easiest syrup recipe I have used.

I modify the recipe to:

equal parts cherry juice vs. sugar

chokecherry trees are abundant in many western locations, and we pick them on public land...they grow wild here -

the cherries ripen here in mid-Sept thru Oct.

today, I completed my final batch of syrup making for the season and the pantry is full now.

one other item - be certain to only cook with 3 to 4 cups of cherry juice at a time (doubles to 6 to 8 because of the added sugar) the hard boil process causes a foam which is twice the volume of the base liquid, and will overtop the saucepan unless you are using a giant pan.
