2 cups cooked, mashed sweet potatoes
3/4 cup sugar
1 cup of milk
2 eggs beaten
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup sliced pineapple ( cut into small cubes )
Heat oven to 400 degrees
Grease 2 quart casserole dish
Mix all ingredients and place in prepared dish
Bake 20 minutes
Topping:
3/4 cup corn flakes
1/4 cup raisins
1/2 cup chopped nuts (pecans or walnuts preferred)
1/2 cup brown sugar
1 stick butter,melted
marshmellows to cover
Mix all ingredients (except marshmellows) and spread over sweet potatoes
Top with marshmellows
Return to oven for 10 minutes or untill brown

This is a pain in the a.., but it makes sweet potatoes more edible to me. Stain them through a wire mesh srainer after cooking them. Through out all that stringy garbage. Makes them really creamy! Of course, the stringy crap probably has all the nutrients in it. That's the way nature is, you know.
