Just had some ground Bison, which is leaner than most sources of “extra lean” ground beef. Not a big fan of red meat, but it IS one of the few good sources of B vitamins and folate. Besides, it’s also enjoyable ... in small portions.

Biggest problem with most red meat is the saturated fat … which in and of itself is also not bad. But saturated fat releases an intrinsic hormone that acts to increase appetite. So if you’re eating a lot of butter and other animal fat, you’re more likely to eat a bigger, total quantity of FOOD. Which we know, for sure, IS BAD.

Afterall, the only proven method for increasing longevity and decreasing chronic illness in animals is through dietary restriction (with the caveat of still getting enough protein, fat, vitamins and minerals). You’ll notice that carbs are not in that list. So the key is to eat ENOUGH nutrient dense foods … but not a big quantity of anything.

And remember to laugh while eating your Bison burger.

Happy eating, C.C.
